Southwestern Egg Casserole
10 eggs beaten
2-3 T melted butter
1 teaspoon baking powder
1/2 teaspoon salt
16 oz small curd cottage cheese
8 oz monterey jack, cheddar or Mexican blend cheese, shredded
1 small can diced green chiles (optional)
Beat eggs well, by hand or with mixer. Add other ingredients and mix until incorporated.
Put into greased casserole and bake at 350 degrees for 40-50 minutes or until toothpick comes out clean and top is golden brown.
Serve with salsa.
*Can be made 1 day ahead of time and bake before serving. Serves 8-10
