Italian Style Mussels


1 bag mussels, scrubbed and debearded
1 medium tomato, diced
4 large cloves garlic, chopped fine
2 cups white wine (chardonnay)
2 Tbsp olive oil
Fresh Basil
Fresh Ground Black Pepper and salt
1 Tbsp Dried Oregano
2 Tbsp butter


Heat olive oil and garlic in sauté pan until garlic colors. Add mussels and 1 cup white wine, cover and let cook until mussels open. Remove Mussels from pan, reserving all juices. Add remaining cup of white wine, adding tomato and butter. Add oregano, salt and pepper to taste. When tomatoes become softened, add basil, stir through and serve over mussels.

Great over pasta or with crusty bread.
