Roasted Red Peppers

Ingredients

4-6 large red peppers
Olive Oil to coat the peppers
Basil
Parsley
Salt and pepper to taste
Oregano
Minced Garlic

Directions

Coat peppers in oil and bake in 400 degree oven till black.
Put in bowl and cover with saran wrap about ten minutes.
Remove skins and seeds and chop in slices.

In skillet, combine olive oil and garlic. Add peppers, basil, parsley, oregano, and salt and pepper.

Let cool and serve cold.
