Sweet and Sour Chicken


3/4 cup flour
3/4 cup cornstarch
1 1/2 T baking powder
1/4 tsp salt
1 1/2 T Peanut Oil
1 cup water

3/4 cup white vinegar
1/2 tsp salt
6 T tomato sauce
1 T worchestire sauce
3/4 cup sugar
1 T cornstarch

4 cups peanut oil for deep frying
3/4 lb boneless chicken breasts cut into cubes
3 T flour(to dust chicken)
1 minced garlic clove
4 scallions(white part only, cut diagonally)
1/2 cup bamboo shoots, sliced
pineapple chunks
1 medium red pepper chopped


Combine ingredients for batter. Slowly add water, stir with whisk until smooth. Set aside.

Combine all the ingredients for the sauce. Set aside.

Dust chicken with flour. Place in batter one at a time and fry in heated oil until golden brown. Drain on paper towels. Remove oil from skillet and return to high heat. Stir in the garlic and scallions for about 30 seconds. Add bamboo shoots, pineapple, and pepper. Pour in sauce mixture and heat until thick and boiling. Pour over chicken and serve over rice.
