Turkey Chili


2 tbs olive oil
2 lbs. Ground turkey
2 cups chopped onions
4 cloves garlic- minced
1 small yellow pepper
1 small red pepper
2 cups chopped carrots
2 cans corn
2 cans black beans
2 cans tomato sauce
2 cans kidney beans
1 tsp cayenne pepper
1 tbs sugar or brown sugar
1 tbs paprika
3 tsp chili powder
2 tsp ground cumin
1 cup chicken broth (or can- cup plus 1 boullion cube)
2 tomatoes


sautee onions and garlic in olive oil for about 5 minutes til they are clear. Then add yellow and red peppers saute about another 5 minutes. When done, set aside. Add ground turkey to skillet and brown for about 5 minutes then add back the onion, pepper mixture and brown with the turkey. When done pour into large pot.

Paste mixture: mix in small bowl all spices and sugar- Add about 2 tbs of water to mix into a paste. You can add a dash of flour to thicken it if you like.

Add tomato sauce and chopped tomatoes and carrots to pot. Add chicken broth. Slowly spoon in paste about 2 tbs at a time to taste. Add bay leaves. Cook about an hour on low flame.

Add cans of corn, black beans and kidney beans. Cook another hour or 2 depending on how much liquid you would like to burn off. (You can cook it 3 hours too until it is nice and thick!) As it cooks, you can test the spice level and add more if you would like to.
